Carrot Tangy Salad Dressing

I am always on the lookout for a good raw vegan salad dressing that I can use daily and not get sick of.

This Carrot Salad Dressing is just one of those types of dressings where I eat an obscene amount of salad just to be able to have the dressing again.

When it’s all blended up it has a pretty orange colour to it.

 

If you let it sit in the fridge it will get thicker so I just add some water to it a bit each day until it’s a smooth consistency that it flows out of the dressing container I have.

All the flavours together make a savoury tangy dressing I can’t get enough of.

Ingredients

  • 3 carrots (peeled and cut into chunks)
  • 3 teaspoons of ginger (I just cut a chunk off about the size of my thumbnail)
  • 2 cloves of garlic
  • 3 lemons juiced/squeezed
  • 1 large or 2 smaller oranges
  • 2 teaspoons of maple syrup (optional if you want it sweeter)
  • 2 tablespoons fresh cut parsley (optional)
  • 1/4 cup water

Directions

  1. Place all the ingredients in a blender and blend until smooth.
  2. Pour into a dressing container and keep in the fridge.
  3. Can be kept in the fridge for 7-8 days before it starts to lose its taste and turn bad.

This can also be a dip as well if you leave out the water which thins it out.
