This rice bowl reminds me of what vegetable fried rice tastes like. It’s like a super healthy raw vegan similar type dish.

I have eaten this cold many many times, but once in a while, I want a warmed up dish for supper and have put this all together in an ovenproof dish and on low heat for 15 minutes, or in the dehydrator for an hour just to warm it up.

The “rice” part is made from cauliflower. Grab a head of cauliflower and grate it or put it in your food processor with the s blade to chop it up into small rice size pieces.

Now to make the sauce that you pour on top and soak it in a bit.

In your Vitamix or blender add:

2 cloves of garlic
some grated ginger
6 tablespoons of nama shoyu or tamari
juice of 2 lemons
couple sprinkles of raw sesame seeds
3 tablespoons of maple syrup or your choice of sweetener
pinch of sea salt
pinch of paprika
add a bit of water to get a nice smooth consistency

In the food processor, or you can chop by hand:

carrots
cabbage
mushrooms
green onions
coloured bell peppers
pea pods
zucchini
any other vegetable you want in your stir-fry

Pulse the vegetables just 1 or 2 quick times, then pour in about 1/4 cup of the sauce and pulse 1 more time to coat the vegetables.

Now if you are eating if yourself or bring to a potluck put all of the cauliflower “rice” into a large bowl and then top with the vegetables. You can mix it all together or just leave the veggies to sit on top. Can you eat it with chopsticks? I have yet to master the use of chopsticks without an elastic on the end haha

Vegetable "Fried Rice" Bowl

Ingredients

For the "Rice":

  • 1 head cauliflower

For the Sauce:

  • 2 cloves of garlic

  • 3 tablespoons of maple syrup or your choice of sweetener
  • pinch of sea salt
  • pinch  of paprika

The vegetables:

  • 1 carrots chopped in large chunks
  • 1-2 cups colored cabbage chopped in large chunks
  • 6-8 mushrooms
  • 1 bunch green onions
  • 1-2 coloured bell peppers chopped in large chunks
  • handful pea pods
  • 1-2 zucchini chopped in large chunks
  • any other vegetable you want in your stir-fry chopped in large chunks

Instructions

  1. Grab the head of cauliflower and grate it or put it in your food processor with the s blade to chop it up into small rice size pieces. Set aside in a large bowl.

  2. Now to make the sauce. Put all sauce ingredients into the Vitamix or any blender and blend until smooth.

  3. Now put all the vegetables into the food processor. Pulse the vegetables just 2 quick times, then pour in about 1/4 cup of the sauce and pulse 1 more time to coat the vegetables.

  4. Now if you are eating if yourself or going to bring to a potluck put all of the cauliflower "rice" into a large bowl and then top with the vegetables. You can mix it all together or just leave the veggies to sit on top. Can you eat it with chopsticks? I have yet to master the use of chopsticks without an elastic on the end (haha)

    You can add more sauce on top or use healthy soya sauce.

    This lasts a couple days in the fridge, and gets yummier the longer it soaks in the sauce.

  5. You can add toppings as well, like sesame sprinkled on top, or put bean sprouts on top to mix in the stir-fry. 

Don’t forget those toppings. You can sprinkle sesame seeds or bean sprouts on top as well. Or hemp seeds are also great on top.
